Ukom Isip (Coconut Plantain Pottage)

A One pot meal is truly a time saver in the kitchen. You combine everything in one pot allow to cook whilst to do other things. For Ukom Isip, you find this commonly served at parties in Calabar.

The replacement of rice for plantain is an interesting twist to the popular coconut rice. This is a dish I will suggest to diabetic patients who have been advised to eat plantains. I personally think this is one great way to enjoy unripe plantain.
