Smoked Mackerel Fish Stew

When it comes to cooking sometimes, we are looking for that quick, tasty meal to prepare and have time for other things. Stews are quite versatile and combines well with other dishes.

I always recommend that you have previously ground and boiled tomatoes and pepper in the freezer for when you need to fix something quick like this Mackerel fish stew.

Using smoked fish which technically is already cooked makes life so easy. You do not have to bother with steaming or frying the fish before cooking.

 2 smoked mackerel fish medium size
 2 cups tomato/pepper mix
 1 Onion medium size
 ¾ cup vetegable oil
 ½ handul curry leaves
 1 tablespoon minced ginger
 ½ Water or Meat stock
 seasoning cube to taste
 salt to taste

Dress the fish removing the skin and bones

Chop the oil

Heat the oil and fry onion and ginger till soft

Add the tomato/pepper mix and fry

Add seasoning cube, a little salt and water and fry till dry

Add the fish and curry leaves and cook for about 3 minutes

Serve with boiled yam, plantain or rice
