The replacement of rice for plantain is an interesting twist to the popular coconut rice. This is a dish I will suggest to diabetic patients who have been advised to eat plantains. I personally think this is one great way to enjoy unripe plantain.

Ingredients
4 Unripe Plantains
3 cups Coconut Milk
1 cup tomato/tatashe/pepper mix
1 medium size onion chopped
8 pieces beef previously seasoned and cooked
8 pieces hard shell prawns
½ cup coconut oil
1 tbsp Ground crayfish
2 cups warm water for squeezing out coconut juice
salt to taste
Instructions
1 Peel the plantain and cut into the pieces
2 Grate coconut and squeeze juice with warm water
3 Add coconut juice to pot of boiled beef and prawn
5 Add tomato/tatashe/pepper blend, crayfish, seasoning cube and salt
7 Add the plantain, stir and cook till plantain is soft and the sauce thickens
8 Stir plantain to thicken sauce when plantain is cooked
9 Correct seasoning and cook for another 2 minutes
